Vegan Vanilla Pudding


  • 1⁄2 Cup sugar
  • 2/3 Cup cornstarch
  • 1⁄4 tsp salt

Mix above ingred. thoroughly with a wisk in a sauce pan. Then add:

  • 1-14 oz can lite coconut milk (Trader Joe’s)
  • 1 3⁄4 Cups soy or almond milk

Mix all ingredients and cook over medium heat, stirring constantly till thick. Remove from heat and add 1 1⁄2 tsp vanilla extract and 2-3 drops yellow food coloring. Let cool 10-15 minutes at room temperature.

Coconut Cream Pie

After cooling 10-15 min. add coconut flakes to taste and stir. Place in a 9 inch baked pie crust and cool in refrigerator. Then top with cool whip and coconut flakes.
