Summer Corn & Tomato Saute

(Vegan)

(Serves 4)

  • 2 cups fresh raw corn kernels
  • 1/4 cup chopped red onion
  • 3 medium tomatoes, chopped
  • 1/4 cup chopped fresh basil
  • Freshly ground black pepper, to taste

Heat 2 tablespoons water in a skillet and sauté corn and onion, stirring occasionally until corn is tender, about 5 minutes. Remove from heat and let stand for 5 minutes. Stir in tomatoes and basil. Season with black pepper.
