Minestrone Soup

(Vegan)

  • 2 C cabbage - chopped in lg. pieces
  • 2 C diced potatoes
  • 2 lg. carrots - diced or sliced
  • 1 1⁄2 C celery - diced or sliced
  • 3⁄4 lg. onion - diced
  • 1/3 C barley
  • 2 Tbs. quinoa (be sure to rinse first)
  • 1 14 oz can diced tomatoes or 2 C diced fresh
  • 1 14 oz can drained and rinsed pinto beans
  • 1 Tbs. Soy sauce
  • 2 Tbs. McKay’s chicken seasoning (a non-meat product)
  • 1 Tbs. parsley
  • 1 1⁄2 tsp. salt
  • 9 C water

Place all ingredients in a large pot and bring to a boil then simmer for 30 Minutes. Then add: 1 C elbow macaroni. (I use whole wheat 365 brand from Whole Foods Market or one made from Spelt-another whole grain)

2 cloves crushed garlic.

Simmer for another 15-20 minutes
