Lentil Vegetable Soup
(Vegan)

- 12 C water
- 1 1⁄2 C lentils - uncooked
- 1 Tbs salt
- 1⁄2 tsp oregano
- 1⁄2 tsp onion pwd
- 1⁄2 tsp garlic pwd
- 1 tsp cumin
- 1-8 oz can tomato sauce
- 1- 15 oz can diced tomatoes or 2 C diced fresh tomatoes
- 1 Tbs parsley
- 2 bay leaves
- 3 med. Potatoes - diced
- 2 carrots - diced or shredded
- 2 celery - diced
- 3⁄4 lg onion - chopped
- 1⁄4 C plus 2 Tbs quinoa
- 3⁄4 C whole wheat macaroni noodles ( I like Whole Foods 365 brand)
- 2 cloves garlic - crushed. Add last 10 min.
Bring all ingredients to a boil and simmer 60 Min. Add garlic the last 10 minutes.
