Lentil Barley & Cilantro Soup

(Vegan)

  • 1-16 oz. bag of lentils (2 1⁄2 C.)
  • 1⁄2 C. barley (hulled)
  • 8 Cups water

Simmer 40 min. till soft

  • Add 1 bunch finely chopped cilantro
  • 1 bunch green onion - chopped
  • 2 C. diced tomatoes or 1-14 oz can diced tomatoes
  • 1 bell pepper - diced
  • 2 tsp salt
  • 1 tsp. McKays chicken seasoning (Vegan style)
  • 1⁄4 tsp. dry parsley
  • 1⁄2 tsp. garlic pwd.
  • 1⁄2 tsp onion pwd.

Add 5 more cups water and bring to a boil then simmer 15 min. more.

This is an easy soup and makes a lot. This freezes well.
