Lentil Barley & Cilantro Soup
(Vegan)

- 1-16 oz. bag of lentils (2 1⁄2 C.)
- 1⁄2 C. barley (hulled)
- 8 Cups water
Simmer 40 min. till soft
- Add 1 bunch finely chopped cilantro
- 1 bunch green onion - chopped
- 2 C. diced tomatoes or 1-14 oz can diced tomatoes
- 1 bell pepper - diced
- 2 tsp salt
- 1 tsp. McKays chicken seasoning (Vegan style)
- 1⁄4 tsp. dry parsley
- 1⁄2 tsp. garlic pwd.
- 1⁄2 tsp onion pwd.
Add 5 more cups water and bring to a boil then simmer 15 min. more.
This is an easy soup and makes a lot. This freezes well.
