Dakota Split Pea & Barley Soup
(Vegan)

Cook 1⁄2 C hulled barley for 1 hr. to add at the end to the soup. While this is cooking prepare the soup.
- 1 lb. split peas
- 1/3 C barley (Use hulled not pearled. Pearled is like white rice that has the nutrients stripped off. Hulled is the whole grain.)
- 9 C water
- 2 bay leaves
- 2 tsp salt
- 1 Tbs low sodium soy sauce or low sodium Tamari
- 1 1⁄2 tsp dry thyme (not pwd form)
- 1⁄4 tsp dry pwd sage
- 1⁄4 tsp cumin
- 5-6 cloves garlic - crushed
Place in a large pot and bring to a boil then cover and simmer for 1 hour. Then add:
- 1 C diced carrots
- 2/3 C minced onion
- 1/3 C finely diced celery
Stir in and cover and simmer for 30 minutes more. Discard bay leaves. Serve and top with sliced green onions. This soup tends to thicken when left in the refrig. So if you like it thinner then add more water.
