Broccoli Cream Soup

  • 1 Cup of raw cashews (soaking first is recommended)
  • 1/4 Cup of nutritional yeast flakes
  • 2 tablespoons of arrowroot powder
  • 1 tablespoon of paprika
  • 1/2 tablespoon sea salt
  • 1 Clove of garlic
  • 1/4 of a yellow medium onion
  • 7 cups of water
  • 2 lbs. broccoli florets

Blend all ingredients except broccoli florets In the Vitamix blender until creamy. Pour the mixture into a pot and bring it to a boil, stirring occasionally. Then add broccoli florets that are cut into small pieces and let it simmer for 5 minutes more. Remove from the stove and let it sit for five minutes.
