Black Bean & Sweet Potato Soup
(Vegan)

(Makes 4 large servings = 16 cups)
This soup is one of the favorites of Little Green Forks home meal delivery company. Not surprising as it is colorful and the medley of flavors work well together.
- 4 1⁄2 cupsWater
- 4 cups Vegetable soup base
- 2 tsp Italian seasoning
- 2 tsp Mrs. Dash
- 2 tsp Granulated garlic
- 1 Onion diced
- 4 cups Black beans
- 4 Cups Sweet potatoes diced & roasted - you can add reg. potatoes too
Pre heat oven to 350. Skin and dice the sweet potatoes. Spread them out on a baking sheet and bake for 30 – 45 min.
Sauté the onions in a pot with the Italian seasoning, Mrs. Dash, Granulated garlic, and 1⁄2 cup of the water.
Once the onions are soft, add the soup base and the remainder of the water and bring to a boil. Add the black beans and the sweet potatoes and cook on medium heat for 10 – 15 min.
