Tabouleh

(Vegan)

  • 1 C bulgar wheat (#1 thin for fine grain)
  • 1 C hot water
  • 4-5 green onions - chopped
  • 2 cloves minced garlic
  • 2 Persian cucumbers - diced
  • 2 large tomatoes - diced
  • 1⁄2 C parsley - chopped
  • juice of one lemon
  • salt and pepper (about 1⁄2 tsp each)

Combine bulgur and water.

Cover and let stand for 30 Min.

Fluff bulgur.

Add all ingredients and mix.

Keep covered and refrigerated.

This salad is great as a side dish to Falafels. I get the falafel mix in a box by Telma (6.35 oz.) at Vons. I form them into small patties instead of balls because they fit into the pita easier and then fry on both sides till firm in a non- stick pan sprayed with Pam. Place in a whole wheat pita with garlic humas(Trader Joe’s) or make your tomatoes, lettuce or sliced cucumbers.
