Pasta Romaine Salad

(Vegan)

(16 Servings)

  • 16 ounces penne pasta
  • 1 head romaine lettuce-thinly sliced (about 6 cups)
  • 1 1⁄2 C small broccoli florets
  • 1 large carrot - cut julienne style
  • 1⁄2 C sliced or chopped red onion
  • 2 plum tomatoes - sliced and cut in half or 20 or so grape tomatoes cut in half
  • 1 – 3.25 oz. can sliced olives

Cook, drain and chill pasta then add other ingredients.

Dressing:

Homemade vegan ranch dressing mixed with “Follow Your Heart” Caesar dressing to taste.

Season salad with salt if needed.

All ingredients can be increased or decreased according to taste.
