Hot Three Bean Salad
(Vegan)
Serves 6 (side dish)
- 1 1⁄2 C frozen shelled edamame. Steam for 5 Min. then rinse in cold water.
- 1-2 Tbs. olive oil
- 1 tsp. ground cumin
- 1- 15 oz. black beans, drained and rinsed
- 1- 15 oz. black-eyed peas, drained and rinsed
- 1/3 C chopped red onion
- 2 C thinly sliced celery
- 2 Tbs. fresh lime juice
- 1⁄2 C chopped cilantro
- 1 tsp. finely chopped garlic
- 1/8 tsp black pepper
- 1 tsp salt
Heat oil in a small pan over moderately low heat until hot but not smoking then cook cumin, stirring, until fragrant and a shade darker, about 30 seconds. Toss all ingredients together and let stand 10 minutes for flavors to blend.
