Egg less Potato Salad
(Vegan)
- 8 C Yukon Gold potatoes, cut in 1⁄2 “ cubes. Yukon gold are best for this, they are very rich and creamy.
- 2-3 celery - diced
- 1⁄4 C red onion or less - diced
- 2 Tbs.-1/4 C fresh dill, fresh is best!
- 1 C or less vegan mayonnaise
- 1 1⁄2 - 2 tsp salt or to taste (you can replace some of the salt with Herbamare seasoning salt)
- shake in fresh black pepper to taste
- 3/4 tsp Dijon mustard
Steam potatoes in a lg. pan with a steamer rack 10-15 minutes till they yield to a fork. Transfer to a lg. bowl and cool for 30 Min.. Mix pepper, salt and mustard with mayonnaise then blend with other ingredients.
