Egg less Potato Salad

(Vegan)

  • 8 C Yukon Gold potatoes, cut in 1⁄2 “ cubes. Yukon gold are best for this, they are very rich and creamy.
  • 2-3 celery - diced
  • 1⁄4 C red onion or less - diced
  • 2 Tbs.-1/4 C fresh dill, fresh is best!
  • 1 C or less vegan mayonnaise
  • 1 1⁄2 - 2 tsp salt or to taste (you can replace some of the salt with Herbamare seasoning salt)
  • shake in fresh black pepper to taste
  • 3/4 tsp Dijon mustard

Steam potatoes in a lg. pan with a steamer rack 10-15 minutes till they yield to a fork. Transfer to a lg. bowl and cool for 30 Min.. Mix pepper, salt and mustard with mayonnaise then blend with other ingredients.
