Black Bean Salad
(Vegan)
Ingredients
- 2 Cups cooked black beans
- 1 Cup raw or frozen corn
- 1/2 Cup Red onion - diced
- 1/2 Cup Tomato - diced
- 1/2 Cup Cilantro - chopped
- 1/2 Cup Red bell pepper - diced
- 1/2 Cup Cucumber - diced
- 1 Jalapeno pepper - finely diced
- 1 Avocado - cut in cubes and added just before serving
- 3 Tbs. Lemon juice
- Salt and pepper to taste
Instructions:
Mix the diced vegetables in a bowl with salt, pepper and lemon then beans and corn. Mix thoroughly and add the avocado just before serving.
Enjoy over a tostada.
