Black Bean Salad

(Vegan)

Ingredients

  • 2 Cups cooked black beans
  • 1 Cup raw or frozen corn
  • 1/2 Cup Red onion - diced
  • 1/2 Cup Tomato - diced
  • 1/2 Cup Cilantro - chopped
  • 1/2 Cup Red bell pepper - diced
  • 1/2 Cup Cucumber - diced
  • 1 Jalapeno pepper - finely diced
  • 1 Avocado - cut in cubes and added just before serving
  • 3 Tbs. Lemon juice
  • Salt and pepper to taste

Instructions:

Mix the diced vegetables in a bowl with salt, pepper and lemon then beans and corn. Mix thoroughly and add the avocado just before serving.

Enjoy over a tostada.
