Scrambled Tofu
(Vegan)

- 1 – 19 0z box soft tofu
- 1⁄4 lg. onion - diced-or more to taste
- 1-2 clove garlic - pressed
Shake in McKays chicken seasoning to taste for flavor and color( you can add a little turmeric for color)
Sauté onion and garlic till soft and add tofu you have smashed with a fork and fry till the moisture leaves some and becomes like scrambled eggs. You can also add some brown rice to this.
A breakfast burrito can be made with the scrambled tofu by adding it to a soft tortilla shell with potatoes, avocado and salsa.
