Granola

(Vegan)

(Makes about 5 quarts)

  • 10 C. regular oatmeal
  • 4 C. whole wheat flour
  • 1 C. wheat germ
  • 2 C. shredded coconut
  • 3 C. chopped walnuts
  • 1 C. brown sugar
  • 1 Tbs. salt

Place in a large bowl and mix. Then add:

  • 3⁄4 C. canola oil
  • 1 C. water
  • 3⁄4 C. unsweetened applesauce

Wisk together oil, water and applesauce, then add to dry ingred. and blend well. I use a large spoon and my hands.

Place in two 9x13x2” Pyrex pans. Bake at 250-300 degrees for 1 hour. Be sure to stir every 15 minutes so it cooks evenly. This freezes well.
