Macaroni & Cheese Casserole

  • 3 C. macaroni noodles ( Whole foods brand “365” whole wheat) Some will mix half Whole Wheat and half reg. noodles if it is hard to transition to all Whole Wheat, although Whole Foods brand is very good. Cook noodles and drain but don’t rinse and place in a 9x13 Pyrex baking dish.

Sauce:

  • 3 C soy milk
  • 2 Tbs. margarine
  • 2 1/2 Tbs. flour
  • 1 tsp salt
  • 1⁄4 tsp onion salt
  • 1⁄2 - 8 oz. package Daiya Cheddar cheese

Melt margarine in the pan you cooked the noodles in. Add the salt, onion salt, flour and mix. Add milk and wisk over heat till sauce thickens then add cheese and stir to melt. Pour over noodles and mix. Bake uncovered at 350 degrees for 45 min.

I usually double this recipe and freeze one casserole for later use. Freeze without baking, then thaw and bake.
