Fruit & Coconut Bars

(Vegan)

Base Layer:

  • 1 1⁄4 C. unsweetened coconut
  • 3⁄4 C. whole-wheat pastry flour
  • 1/8 tsp. salt
  • 1⁄4 C. nondairy milk
  • 1⁄4 C. maple syrup
  • 2 Tbs. oil
  • 1⁄4 tsp. vanilla extract
    • Preheat oven to 350 degrees. Coat 8x8 baking pan with nonstick cooking spray.
    • Combine coconut, flour and salt in medium bowl
    • Wisk together milk, maple syrup, oil and vanilla in a separate bowl.
    • Mix milk into coconut mixture; press into prepared pan.

Fruit Layer:

  • Heat 1 C. spreadable all-fruit jam in microwave for 30 sec.-1 min.; spread over the base layer.

Topping:

  • 1⁄2 C. unsweetened coconut
  • 1⁄4 C. whole-wheat pastry flour
  • 1 1⁄2 Tbs. oil
  • 1/8 tsp. salt
    • Combine topping ingredients in medium bowl. Using hands, mix together until it resembles coarse crumbs.
    • Sprinkle topping over fruit layer and press gently.
    • Bake 28-30 min., until topping is light golden brown
    • Allow to cool completely; cut into small bars and serve.
