Fruit & Coconut Bars
(Vegan)
Base Layer:
- 1 1⁄4 C. unsweetened coconut
- 3⁄4 C. whole-wheat pastry flour
- 1/8 tsp. salt
- 1⁄4 C. nondairy milk
- 1⁄4 C. maple syrup
- 2 Tbs. oil

1⁄4 tsp. vanilla extract
- Preheat oven to 350 degrees. Coat 8x8 baking pan with nonstick cooking spray.
- Combine coconut, flour and salt in medium bowl
- Wisk together milk, maple syrup, oil and vanilla in a separate bowl.
- Mix milk into coconut mixture; press into prepared pan.
Fruit Layer:
- Heat 1 C. spreadable all-fruit jam in microwave for 30 sec.-1 min.; spread over the base layer.
Topping:
- 1⁄2 C. unsweetened coconut
- 1⁄4 C. whole-wheat pastry flour
- 1 1⁄2 Tbs. oil

1/8 tsp. salt
- Combine topping ingredients in medium bowl. Using hands, mix together until it resembles coarse crumbs.
- Sprinkle topping over fruit layer and press gently.
- Bake 28-30 min., until topping is light golden brown
- Allow to cool completely; cut into small bars and serve.
