Flourless Pumpkin Brownies

Ingredients:

  • 2 flax eggs (2 TBSP ground flax + 6 TBSP water. Let sit for 15 minutes)
  • 1 cup Tahini
  • 1/2 cup maple syrup (substitute coconut sugar)
  • 1/3 cup pumpkin purée
  • 1 1/2 TBSP pumpkin spice
  • 1 tsp vanilla extract
  • 1/3 cup cacao (substitute cocoa)
  • Pinch of salt
  • 1 tsp baking soda
  • 1/2 cup chopped walnuts
  • 1/3 cup mini dairy-free chocolate chips (optional, ex. EnjoyLife brand)

Instructions:

  • 1. Mix wet ingredients in a medium sized bowl
  • 2. Add dry ingredients and mix
  • 3. Fold in nuts and chocolate chips if using
  • 4. Add batter to a greased 8x8 baking dish
  • 5. Bake for 350F for 28-30 minutes
  • 6. Let cool completely
  • Optional step: Melt chocolate chips and drizzle on top
  • 7. I store mine in the refrigerator in an airtight container.
