Blender Fruit Ice Cream

(Vegan)

  • 4 Cups frozen tropical fruit blend (Costco), I also add blueberries (and even some baby spinach sometimes)
  • 1 Cup soy or almond milk
  • 1⁄4 Cup sugar, or succanant or dates
  • 1⁄2 tsp vanilla

Blend in a powerful blender like Vitamix for 30 to 60 seconds using the wand to push the fruit down. Serve immediately or freeze as popsicles for later.
