Blender Fruit Ice Cream
(Vegan)
- 4 Cups frozen tropical fruit blend (Costco), I also add blueberries (and even some baby spinach sometimes)
- 1 Cup soy or almond milk
- 1⁄4 Cup sugar, or succanant or dates
- 1⁄2 tsp vanilla
Blend in a powerful blender like Vitamix for 30 to 60 seconds using the wand to push the fruit down. Serve immediately or freeze as popsicles for later.
