Banana Oat Bars


(no added oil)

  • 2 C. quick cooking rolled oats (not instant)
  • 1⁄2 C unsweetened coconut
  • 1⁄2 C. chopped dates
  • 1⁄4 C. chopped walnuts
  • 3⁄4 C. fine chopped apple or dried apple-hydrated
  • 1⁄4 tsp. stevia (or 1⁄4 C maple syrup)
  • 1⁄2 tsp. cinnamon
  • 2 large ripe bananas

Blend up bananas in mixer and add all other ingredients and mix well. Press into a 8x8 pyrex pan sprayed with Pam. Bake in the oven for 30 minutes at 350 degrees. Let cool in pan then cut into about 9 squares. If you want them thinner use a larger pan and cut 12. I individually wrap each square and store in the freezer and pull out as needed.
