Baked Apple

(Vegan)

  • Core apples, but not all the way through. Peel upper 2/3rds only.
  • Fill each with 1⁄2 -1 chopped dates and some chopped pecans and 1⁄2 tsp. Earth Balance margarine (or omit).
  • Shake some cinnamon on top to taste.
  • Place in a baking pan with 1⁄2 inch of water and cover with foil and bake at 350 degrees for 45-60 minutes till fork tender.
