Apple Crisp

(Vegan)

  • 1 1⁄2 C quick oats
  • 1 1⁄2 C whole wheat pastry flour
  • 1C brown sugar
  • 1⁄2 C walnuts
  • 1⁄2 tsp salt

Combine the dry ingredients then add:

  • 1⁄2 C softened Earth Balance spread
  • 1⁄4 C unsweetened apple sauce

Mix and add to the dry ingredients using your hands to mix and crumble so it sticks some. Add more apple sauce if it is too dry.

Peel & slice 10-12 Granny Smith apples depending on the size. You can use another apple of your choice if you have a favorite.

Place in a bowl with:

  • 2 Tbs. brown sugar
  • 2 tsp. cinnamon
  • 1/8 tsp. salt
  • 1 1⁄2 Tbs. lemon juice

Mix thoroughly then place in a 9x13 Pyrex baking dish. Sprinkle on the crumble mixture and press gently. Bake at 350 degrees for 45 minutes or until the apples are soft.I have cut this recipe in half and placed it in a 9 inch pie dish. The crumble can be frozen for later use.
