Oatmeal Waffles

(Vegan)

(Makes 6-4x4 inch waffles)

  • 2 C. regular oatmeal
  • 1 C. Bisquick
  • 1⁄4 C. oil
  • 1 C. soy or almond milk
  • 3⁄4 C. hot water
  • 1 Tbs. sugar
  • 1⁄2 tsp. salt

Mix together and let stand to thicken while you heat the waffle iron that you have sprayed with Pam. Add more water or milk if it is too thick. Cook till done. These are very hearty. Top as you like. Very tasty with peanut butter, sliced bananas and a little honey. I usually double this recipe for 4 people. Any leftovers can be reheated in the toaster.
