Crepes

(Vegan)

  • 1 C. flour
  • 1 1⁄2 C soy milk
  • 1⁄2 tsp salt
  • 1 Tbs melted non-dairy margarine
  • Ener G egg replacer to replace 3 eggs. (Found at health food stores, Sprouts, and Whole Foods. See box for amount to equal 3 eggs. This lasts a long time on the shelf.)

Blend up egg replacer with water first then add other ingredients and blend till smooth. I use a Cuisanart Smart Stick for this.

Heat a small non stick fry pan, rub with a paper towel and non-dairy margarine and pour onto pan tipping till a thin layer covers the bottom of pan and cook till golden brown on the bottom and set on top then flip and cook a little more.
