Roasted Yams

(Vegan)

  • 3 Large yams peeled and cut in 1 inch chunks
  • 2 onions cut in 1 inch chunks - separate the layers

Place in a bowl and drizzle a little olive oil over onions and yams

Sprinkle on some salt and pepper.

Place on a large flat cookie sheet. I like placing a silpat down so things don’t stick.

Roast at 400 degrees for 30-40 minutes till the onions are very soft. Some will be crispy. Turn once during baking if needed. These can be prepared ahead and placed in a pyrex pan and warmed through before serving.

The onions give the yams such a great taste!!
