Mexican Rice

In a large heavy pot fry in oil:

  • 1 small onion - chopped
  • 1 garlic clove - crushed
  • Add 2 C. rice and fry about 1 minute.
  • Add 2 3/4 C. water
  • 1-8 oz. can tomato sauce
  • 1 Tbs. McKays chicken seasoning
  • 1 1⁄4 tsp. salt

Stir and cover and bring to a boil then simmer for about 20 minutes.

This doubles well. I can make this ahead and freeze it. One recipe serves about 12.
