Lentil Vegetable Soup

  • 12 C water
  • 1 1⁄2 C lentils - uncooked
  • 1 Tbs salt
  • 1⁄2 tsp oregano
  • 1⁄2 tsp onion pwd
  • 1⁄2 tsp garlic pwd
  • 1 tsp cumin
  • 1-8 oz can tomato sauce
  • 1- 15 oz can diced tomatoes or 2 C diced fresh tomatoes
  • 1 Tbs parsley
  • 2 bay leaves
  • 3 med. Potatoes - diced
  • 2 carrots - diced or shredded
  • 2 celery - diced
  • 3⁄4 lg onion - chopped
  • 1⁄4 C plus 2 Tbs quinoa
  • 3⁄4 C whole wheat macaroni noodles ( I like Whole Foods 365 brand)
  • 2 cloves garlic - crushed. Add last 10 min.

Bring all ingredients to a boil and simmer 60 Min. Add garlic the last 10 minutes.
