Hot Three Bean Salad

(Vegan)

Serves 6 (side dish)

  • 1 1⁄2 C frozen shelled edamame. Steam for 5 Min. then rinse in cold water.
  • 1-2 Tbs. olive oil
  • 1 tsp. ground cumin
  • 1- 15 oz. black beans, drained and rinsed
  • 1- 15 oz. black-eyed peas, drained and rinsed
  • 1/3 C chopped red onion
  • 2 C thinly sliced celery
  • 2 Tbs. fresh lime juice
  • 1⁄2 C chopped cilantro
  • 1 tsp. finely chopped garlic
  • 1/8 tsp black pepper
  • 1 tsp salt

Heat oil in a small pan over moderately low heat until hot but not smoking then cook cumin, stirring, until fragrant and a shade darker, about 30 seconds. Toss all ingredients together and let stand 10 minutes for flavors to blend.
