"Parmesan Cheese"

  • 1 cup almond meal. Found at Trader Joes in the nut section.
  • 1 tablespoon plus 1 1/2 teaspoons nutritional yeast flakes
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • 1/2 teaspoon garlic powder

Add the nutritional yeast, onion powder, salt, and garlic powder to the coffee grinder and pulse until well mixed. Empty into the large bowl with the almond meal and mix well. This produces a fine “parmesan-like” texture. Transfer to a covered container and refrigerate until ready to use. Covered and refrigerated, Homemade Parmesan will keep for 3 months.

To make your own almond meal put raw almonds in a coffee grinder a little at a time. Process until they are finely ground, stopping occasionally to loosen the meal. (Avoid over-processing or it will turn into almond butter.) Keep doing this in batches till all the almonds are processed. Place in a fine sieve and shake over a large bowl to separate the lumps and reprocess the lumps. The grinding/sieve process takes a bit of time but it’s worth the results.
