Overnight Steel-Cut Oats

3 C. water-bring to a boil

Add 1⁄4 tsp. salt and 1 C. steel-cut oats.

Stir and bring back to a boil then simmer for 3 minutes. Cover and place in the refrigerator overnight. In the morning reheat in the microwave. Add non- dairy milk and fruit like diced apples, walnuts and cinnamon. Or bananas, walnuts and cinnamon. Or fruit of your choice. I like to sprinkle on some flax seed meal.
