Flourless Pumpkin Brownies

Ingredients:
- 2 flax eggs (2 TBSP ground flax + 6 TBSP water. Let sit for 15 minutes)
- 1 cup Tahini
- 1/2 cup maple syrup (substitute coconut sugar)
- 1/3 cup pumpkin purée
- 1 1/2 TBSP pumpkin spice
- 1 tsp vanilla extract
- 1/3 cup cacao (substitute cocoa)
- Pinch of salt
- 1 tsp baking soda
- 1/2 cup chopped walnuts
- 1/3 cup mini dairy-free chocolate chips (optional, ex. EnjoyLife brand)
Instructions:
- 1. Mix wet ingredients in a medium sized bowl
- 2. Add dry ingredients and mix
- 3. Fold in nuts and chocolate chips if using
- 4. Add batter to a greased 8x8 baking dish
- 5. Bake for 350F for 28-30 minutes
- 6. Let cool completely
- Optional step: Melt chocolate chips and drizzle on top
- 7. I store mine in the refrigerator in an airtight container.
