- 1 C. yellow cornmeal
- 2 Tbs. sugar
- 1 tsp. salt
- 1 C. boiling water
Combine dry ingredients and stir in boiling water. Cover and let stand for 10 minutes.
Sift 1⁄2 Cup whole wheat flour and 2 tsp. baking pwd. and set aside.
Blend 1 Tbs. flaxseed with 3 Tbs. water with an immersion blender till thick. (Or 1 egg-wisked).
Then add 3⁄4 C soy or almond milk and 2 Tbs. melted margarine (I like Earth Balance)
After cornmeal mix has set for 10 minutes mix in the above ingredients till blended.
Heat a non-stick frying pan that you have wiped with oil or use Pam and using a 1⁄4 C measuring cup scoop out and pour batter to form pancakes. Cook till bubbles form on the surface and the edges become dry. Turn and cook till golden brown.
Good with maple syrup, or peanut butter and honey, etc.
