Bran Flax Muffins

(Vegan)

  • 1 1⁄2 C Whole wheat flour
  • 3⁄4 C flaxseed meal
  • 3⁄4 C oat bran (found at Trader Joe’s)
  • 3⁄4 C brown sugar or 1⁄4 tsp. Stevia
  • 2 tsp baking soda
  • 1 tsp baking powder
  • 1⁄2 tsp salt
  • 2 tsp cinnamon
  • 1 1⁄2 C finely shredded carrots
  • 2 cored and shredded apples-leave on skin
  • 1 C walnuts-chopped
  • 1 C non-dairy milk
  • 2 Tbs. flaxmeal blended with 6 Tbs. water or 1/4 C soft tofu blended in the milk (to replace 2 eggs)
  • 1 tsp vanilla
  • 2 Tbs. applesauce

Mix all ingred. until moistened. Don’t use muffin liners and just put directly into non-stick muffin tins that have been sprayed with Pam. Fill above top of tin.

Bake at 350 degrees for 15-20 minutes. When done let cool in tins for 5-10 min. then twist to remove and cool on wire racks. These freeze well and can be taken out as needed. Makes about 16-18.
